With many ramen stores setting foot in Singapore, we explored the top 3 ramen stores to try this May.

1. Ramen Champion- Joshoken

Located down the stretch of ramen shops in Ramen Champion, you would find Joshoken at the end of the row with a golden signboard in sight. It is famous for being the best ramen in the field of tsukemen and offers an interesting array of tsukemen, chuka soba, shio soba, rice bowls, as well as side dishes such as karaage and gyoza.

Special Kotteri Tsukemen ($16.80) is their signature dish. Cooked to al dentetexture, the ramen is topped with pork collar chashu, menma, nori, spinach, ajitama and fishcake. The chashu had a smoked taste to it and that was because it was slightly torched before serving! Its broth is a mix of chicken, pork, onion, ginger, garlic, carrot and leek. The ramen is dipped into the broth to accentuate the flavour.

The other dish we tried was the Maze Soba($14.80). It is a tangy soba mixed with ingredients like garlic chives, spring onions, seaweed, mentaiko, mayonnaise, homemade chilli, minced meat and poached egg. Different level of spiciness can be chosen as well and it goes all the way up to excruciating hot level 20! We had to toss the noodles for about 20 times to achieve the perfect flavour. Upon finishing the ramen, porridge is poured into the remaining sauce and it tasted surprisingly rich.

Ippudo recently introduced the first ever Thai-Japanese Fusion Ramen in Singapore- Tom Yum Tonkotsu Ramen. This bowl of goodness features the traditional Japanese Tonkotsu broth, but with a Thai twist to it. Now, we all know that Ippudo is famous for its perfectly seasoned broth, so you can be sure to expect a really rich and creamy soup base. This is made even better by the punch of flavours added by the tom yum, giving it a sweet and sour kick.

The ramen also comes with a dollop of tom yum minced meat, some pickled cherry tomatoes, 2 fresh garlic tiger prawns, and a half boiled umami egg to top it off. If this doesn’t sound mouth-watering enough, the dish is also drizzled in fragrant shrimp oil and a slice of lime to give it that extra flavour.

3. Machida Shoten
