Black garlic is made from normal garlic that is being fermented at a temperature of 65 to 80 degree celsius. This process usually takes about a month. After that, the garlic is left to get oxidize for another 45 days. Black garlic is black due to a compound called melanoidin. This compound is commonly used to add flavour and colour to beers and ales. Black garlic is sweet, and unlike normal garlic, the intense smell and flavour is eliminated during fermentation.
