Fresh Generation (鲜一代) is the next must-try at Bukit Timah Food Centre! Hidden in a corner on the 2nd level, the store offers a variety of seafood soup which is served along with rice ($0.50/bowl) or handmade noodles ($0.50/bowl). The store was opened in March by the same owners behind Woon Woon Pek Bee Hoon (featured in upcoming article), a hawker store in Changi Village Food Centre. The owners gave up their career to venture into F&B and after their success with Woon Woon Pek Bee Hoon, they decided to open another store at Bukit Timah Food Centre- this time with another broth of a different recipe.

This is not the usual bowl of noodles you would see in a hawker centre. It is a giant bowl of seafood goodness and comes in different sizes, suitable for sharing among your friends. The store sells the  Original Seafood Soup ($6 for 1 pax, $16 for 3 pax)Crayfish Seafood Soup ($10 for 1 pax, $28 for 3 pax)Scallop Seafood Soup ($10 for 1 pax, $28 for 3 pax)Lobster Seafood Soup ($28 for 1 pax, $58 for 3 pax) and Signature Seafood Platter ($28 for 3 pax). All the dishes share the same signature soup– a thick prawn-flavoured broth that is rich and strong. The broth is made by boiling the flower crab. We tried the Signature Seafood Platter, along with 2 bowls of rice and a bowl of their handmade noodles.

We were awed by the amount of seafood in the bowl, from lobster, crayfish, scallops, lala, lobster balls and prawns. The crayfish stood out the most because of how succulent its flesh is and how easily the meat comes apart from its shell. The seafood was lightly wok-fried along with the broth to bring out the wok-hei fragrance. This really brings a unique taste to the broth and its definitely worth a try if you are around the vicinity!

Recommendations

A recommended time to visit this place would be weekdays as the hawker centre gets pretty crowded on weekday evenings and weekends lunch hours. Sometimes, they would even run out of seafood ingredients by dinner time!  If you love seafood and don’t mind paying slightly more in a hawker setting, this dish is perfect for you! It is highly recommended to share this dish with your friends and it would definitely leave a lasting impression among all!
